Easy Gluten-free Brownies, Two Ways

We continue our easy gluten-free baking season using the Bob’s Red Mill Brownie Mix and experimenting with some delicious varieties that are very impressive but simple to make.

The Brownie Mix is specially formulated with a unique blend of gluten free flours, starches and gums, which give a perfect brownie texture minus the gluten! These include, sweet white rice flour, brown rice flour, potato starch, whole grain sorghum flour, tapioca flour and xantham gum. Buying a pre blended baking mix saves you the time and effort of buying, storing and blending all these ingredients. The mix also contains sugar, vanilla and raising agents – you just add egg and butter. You can buy the mix from Amazon, Ocado and Holland & Barrett.
We decided to embellish the classic recipe to make two indulgent varieties – cream cheese and vanilla brownies, and walnut & coffee frosted brownies. The recipes are below, however let your imagination run wild, why not try to use one, or more, of these delicious additions to your batch!

The Classic Gluten-free Brownie
Ingredients

– One pack Bob’s Red Mill Gluten Free Brownie Mix

– 115g butter or margarine, melted

– 1 egg

– 120ml warm water
Method

1. Preheat oven to 180°C. Grease and line a 9 x 9″ pan.

2. Place the Brownie Mix in a large mixing bowl.

3. Beat in melted butter or margarine, egg and warm water until just combined.

4. Spread the batter in the prepared pan and bake for 20-25 minutes or until toothpick inserted in the centre comes out clean.

Cream Cheese & Vanilla Chocolate Gluten-free Brownies

Extra Ingredients

– 50g caster sugar

– 200g cream cheese

– 1 egg

– 1 tsp gluten free vanilla extract
Method

1. Follow steps 1-3 from the classic recipe.

2. Pour half of chocolate batter into prepared pan.

3. Spoon the cream cheese mixture over chocolate layer, add the remaining chocolate batter.

4. Marble with the end of a spoon.

5. Bake for 20-25 minutes.
Walnut & Coffee Frosted Gluten-free Brownies

Extra ingredients (for the brownies)
– 2 tsp instant coffee, mixed into 20ml hot water

– 100g walnut pieces
For the buttercream frosting

– 180 grams icing sugar

– 90 grams soft unsalted butter

– 2 teaspoons instant coffee (dissolved in 1 tablespoon boiling water)

– approx. 9 walnut halves (to decorate)
Method

1. Follow steps 1-3 from the classic recipe.

2. Stir in the walnut pieces and coffee.

3. Follow steps 3-4 from the classic recipe.

4. Blend the frosting ingredients, coat onto the brownie and decorate with walnut halves.
