Easy Gluten-free Pancakes, Two Ways

With Shrove Tuesday AKA Pancake Day coming up next week it’s time to start thinking about gluten-free pancakes.

This year we are craving fluffy American style pancakes, and thanks to Bob’s Red Mill Gluten-free Pancake Mix we are ready to go! The mix contains ready blended gluten-free flours, starches and gums along with rising agents and sugar. Just add a little oil, an egg and milk (or milk alternative) and the mix creates perfectly fluffy, light and golden brown pancakes. QUICK & EASY: Gluten-free Dairy-free Banana & Blueberry American Pancakes (serves 4)

Ingredients

• 160g Bob’s Red Mill Gluten-Free Pancake Mix

• 1 egg

• 15ml vegetable oil

• 180ml coconut milk (we used KoKo) or any other milk suitable for your diet

• Blueberries, banana and maple syrup to serve
Method

1. Whisk the Pancake mix, egg, oil and milk to form a smooth batter.

2. Lightly oil a frying pan, ladle on 60ml of the batter, cook until bubbles show through.

3. Turn and cook until golden brown.

4. Serve with fresh fruit and a generous drizzle of maple syrup.

For those of you who want something a little more fancy (and full of flavour) try ourA LITTLE EXTRA EFFORT recipe below -pure indulgence!
A LITTLE EXTRA EFFORT: Gluten-free Dairy-free Carrot Cake American Pancake Stack (serves 4)

Ingredients: for the pancakes

• 160g Bob’s Red Mill Gluten-Free Pancake Mix

• 1 egg

• 15ml vegetable oil

• 180ml coconut milk (we used KoKo) or any other milk suitable for your diet

• 1 carrot, finely grated

• 40g sultanas

• 30g walnut pieces

• 1 tsp ground cinnamon

• Grated nutmeg
Ingredients: for the icing

• 1 x 250g pot coconut milk yogurt (we used CO YO)

• 100g icing sugar
Method

1. For the icing: combine the coconut yogurt and icing sugar, mix until smooth.

2. For the pancakes: follow the above method, however simply add the grated carrot, walnuts, sultanas and spices into the prepared batter and mix well.

3. Layer the pancakes with the ‘icing’ and serve with a drizzle of maple syrup – enjoy!
