Gluten-free Almond and Apricot Bircher Muesli

To continue our season of gluten-free oat recipes we wanted to share our recipe for Bircher muesli. Named after its creator, Maximilian Bircher-Benner, a Swiss doctor and nutritionist, this is the perfect healthy start to fuel a busy day!

As well as being based on wholegrain oats, our recipe contains 2 of your 5 a day and is dairy and gluten free.
Ingredients– 30g Bob’s Red Mill Gluten-Free Rolled Oats– An apple, grated- 75ml apple juice- 30g Dried fruit (we used raisins and apricots)- Splash of almond milk

– 2 tablespoons dairy free yogurt

– Drizzle of honey

– A few chopped almonds

Method
1. The night before: mix the oats, dried fruit and apple juice – leave to soak in the fridge.2. In the morning: grate the apple – add to the soaked oats with a splash of almond milk.3. Top with yoghurt, nuts and a little honey.
Top tip: pop in a plastic container for a take-away gluten-free breakfast pot.

To make this recipe nut free simply use soya or rice milk and omit the almond topping.
