1 whole Pack of Le Veneziane Italian Classic Potato Gnocchi
For the pesto:
50g Toasted pine nuts
50g Parmesan (or vegetarian alternative)
70ml garlic infused olive oil
A squeeze of lemon juice
1. Blitz the pesto ingredients in a food processor.
2. Bring salted water to the boil, cook the Gnocchi for 1-2 minutes until they float on the surface.
3. Drain, coat in the pesto.
4. Serve with some fresh Kale, a sprinkle of toasted pine nuts and a few shavings of parmesan.
This pesto keeps for up to a week in the fridge, so we used the leftovers for pesto pasta using Le Veneziane Gluten-Free Penne.
