When going gluten-free, bread can be the hardest thing to replace. Many other gluten containing foods can, nowadays, be substituted with little sacrifice to our palette. Bread however is not so easy. Any gluten-avoider will understand the pain of opening your gluten-free bread to find it has miraculously crumbled into a thousand fragments, or tastes stale and dry (we have all made those sandwiches which are very hard to swallow)!

Gluten is a strong, stretchy protein which usually gives bread its doughy elasticity and crusty strength upon baking. Without it, bread can easily crumble and taste pretty dry – but this doesn’t need to be the case!
Top tips for using & storing gluten-free bread
– Slice and freeze it – this allows each slice to stay fresh for as long as possible

– Toast it – this revitalises gluten-free bread, providing texture & strength

– Add flavourful toppings to maximise the taste, wet toppings such as cream cheese add moisture

– If it goes stale, or crumbles, blitz into breadcrumbs and freeze for use in other recipes

Top tip: To add a little extra twist to our loaf, we added ½ cup of Bob’s Red Mill gluten-free 4 grain porridge – this adds a delicious texture! Perfect for breakfast topped with marmalade!
Another great mix to create a simple, delicious white loaf is Semper’s Gluten-free Fin Mix. It is a blend of Maize Starch, Rice Flour and Potato Starch which also contains thickeners and raising agents.Available from from Ocado, the mix can also be used for cakes and biscuits. In true Nordic tradition we served our bread as an open sandwich, toasted with gravadlax and a dill dressing – delicious!
