Will you be our Gluten-free Valentine?

Need an idea for your gluten-free Valentine? Why not wow them with an easy, yet seriously delicious, gluten-free chocolate cake? It is a fast track route to any coeliac’s heart!
Gluten-free needn’t mean more effort, with Bob’s Red Mill pre blended mix all you need to add is eggs, milk, water and a little oil. Hey presto – a perfectly moist and indulgent cake! You can buy the mix from Amazon and Holland & Barrett.
We made ours in a heart shaped tin for added romance…

For the Cake
• 1 x Bob’s Red Mill Chocolate Cake Mix• 2 eggs – lightly beaten• 140ml milk (or milk alternative)• 70ml vegetable oil• 140ml boiling water
For the Icing
• 60g margarine (we used stork)

• 30g cocoa powder

• 3 tbsp milk (or milk alternative)

• 250g icing sugar, sifted
1. Pre heat the oven to 180oC, grease and line 2 x 20cm cake tines (or heart shaped ones if you have them!)

2. Pour the cake mix into a large bowl, make a well in the centre

3. Add the eggs, oil and milk to the well and mix well

4. Mix in the boiling water (the batter will be very runny at this point, but don’t worry!)

5. Pour into the prepared cake tins

6. Bake for 25-30minutes, until an inserted skewer comes out clean

7. Allow to cool on a wire rack

8. For the icing, beat together the margarine, cocoa, milk and icing sugar until well blended

9. Coat the cooled cake generously in icing
