When going gluten-free, bread can be the hardest thing to replace. Many other gluten containing foods can, nowadays, be substituted with little sacrifice to our palette. Bread however is not so easy. Any gluten-avoider will understand the pain of opening your gluten-free bread to find it has miraculously crumbled into a thousand fragments, or tastes stale and dry (we have all made those sandwiches which are very hard to swallow)!

Gluten-Free Aubergine Lasagne Recipe

As promised, we continue our Italian comfort food post with a delicious gluten-free aubergine lasagne.
This hearty recipe replaces the traditional meat filling with aubergine, which creates a naturally lower fat, vegetarian, healthier twist on the classic dish.
We used Le Veneziane Gluten Free Lasagne sheets. They keep a lovely al dente texture and do not require precooking which saves a lot of time and mess!
